Many of these ingredients are native Australian bush herbs and fruits. Kakadu Plum

Provenance: Kakadu Plum grows from the West Kimberly, across the Top End and as far east as Arnhem Land in thickly wooded coastal woodlands.

Culinary Notes: Kakadu Plum has a delicate, pleasingly acidic and refreshing flavor with a light citrus aftertaste.

Lemon Aspen

Provenance:  This fruit is from tall rainforest trees from the higher altitude parts of north-eastern Queensland and north-east NSW.

 

Culinary Notes: This fruit has a fabulous and intriguing taste of intense and tart lemon flavor, and following this incredible citrus hit, secondary favors develop - hints of eucalypt, grapefruit and an almost a note of honey at the finish.

Lemon Myrtle

Dried Powdered

Ingredients: 100% Lemon Myrtle. Contains no artificial colors, flavors or preservatives and gluten free, suitable for vegans.

 

Provenance: The Lemon Myrtle tree from the eastern tropical Australian rainforests.

 

Culinary Notes: Lemon Myrtle herb is the dried and ground leaves of the Lemon Myrtle tree. The leaves are intensely citrus flavored and fragrant and lemon myrtle is ideal with fish, seafood and white meats as well as many desserts.

Pepperberry

Ingredients: 100% carefully dried and ground leaves Pepperberry. Contains no artificial colors, flavors or preservatives and gluten free, suitable for vegans.

 

Provenance: Pepperberry is indigenous to the gullies and woodlands of Victorian and Tasmanian highland and alpine regions.

 

Culinary Notes: Pepperberries are the gorgeous black little berries that have brilliant red flesh. The Pepperberry is the ground, dried berries and the flavor is pungent, aromatic and very spicy with strong heat following. It will also add a deep magenta color to the dish.

Ingredients: 100% wattleseed (powdered). Contains no artificial colors, flavors or preservatives and gluten free, suitable for vegans.

 

Provenance: Wattleseed is one of the most prolific plants in Australia and grows in almost all environments from the desert (mulga and elegant wattle) to the sea (coastal wattle) and everywhere in between.

 

Culinary Notes: Indigenous names include Yarlirti ,Ariepe, Ganabargu, Ngatunpa, and Pulkuru and many more depending on the region and nation. Wattles vary in flavor and color and size depending on the region, but all are intensely flavored. The taste of wattleseed can be broadly described as nutty with coffee and chicory overtones.

Salt Bush

Ingredients: 100% pure , dried Old Man Saltbush Flakes

Provenance: Our Saltbush is grown in South Australia by Indigenous Australian growers within our supply chain. This species is often called Old Man Saltbush.

 

Culinary Notes: The leaves of the Saltbush are dried and ground and provide us with a unique seasoning that provide an umami element to food - instead of using salt.
